Origin of the barriques:
PRUNUS CERASUS: GREAT QUALITY WOOD, VERY HARD AND
COMPACT, ORANGE WITH DARK RED NUANCES. IT COULD BE FOUND IN VALPOLLICELLA IN THE MEDIOEVAL PERIOD ALREADY, IT SPREAD LARGELY AFTER WWI, IN THE PERIOD OF THE RECONSTRACTION OF THE VINEYARDS DESTOYED BY THE WINEPEST (PHYLLOXERA). THE CHERRY TREE, NOT DEMANDING BUT YET PARTICULARLY GENEROUS, REPRESENTED A SUPPORTING FUNCTION FOR THE VINES AND IT GARANTUEED A RICH AND EASILY ACHIEVED INCOME. AFTER MORE THAN HALF OF A CENTURY, WITH THE DISAPPEARANCE OF THE WINE-PEST, THE CHERRY TREE SHOWS ITS GENEROUSITY AGAIN, PROVIDING HIGH-QUALITY WOOD FOR THE PRODUCTION OF SETTLING BARRELS. THE SEASONING OF THE WOOD, AFTER THE FELLING AND THE CHOPPING, TAKES PLACE NATURALLY AND IT LASTS AT LEAST 26 MONTHS, SIX IN THE FELLING PLACE.

THE STEAM-BENDING TECHNIQUE IS APPLIED TO THE STAVES, IN ORDER TO PRESERVE THE AROMATIC FEATURES OF THE WOOD.

Amarone della Valpolicella Classico D.O.C. "Rabieto"

The Amarone "Rabieto" is obtained from Corvina, Rondinella and Negrara grapes yields in the historical Valpolicella. The grapes are carefully selected during October harvesting and then laid out and dried in the winter fresh air. This drying process, called "appassimento", goes on until the following month of January, when the grapes are softly pressed. The fermentation process is slowed by the cold winter temperature and lasts almost 40 days. Malolactic fermentation is performed in tonneaux and oak barrels so that colour and fruity notes become well-defined. The wine has an intense bouquet with a flourish of notes, including light fig, cocoa and vanilla. It has a warm taste and soft tannins, with a very pleasant finale of cherries in spirits.

Perfect in combination with savoury dishes like roasted, barbequed or braised meat or with seasoned cheese. In order to fully appreciate its aroma, it should be served in balloon glasses.

Barbera d’Alba Superiore La Pichetera

A lovely, brilliant, purplish ruby. Remarkably lively, concentrated aromas of full-bodied fruit, with a lovely hint of spice in the background. Entering confidently in the mouth, it builds impressive breadth and a firm tannic structure. Succulent, juicy fruit, enriched with nuances of leather, liquorice, and dried leaves, contributes to classic varietal character, and it unfurls a lengthy, vibrant finish marked by an appealing acid tang. Still young, it exhibits significant cellaring potential.
Serving suggestions: Main courses of meat, particularly mixed boiled meats, stews, and braises, including poultry; hot antipasto dishes that are complex and rich.

Training method and vine density: Vertical Guyot, at 6,000 vines per hectare.

Fermentation and maturation: Fermentation in French oak tonneaux for some 10 days, with punchdowns but no pumpovers. After drawing off, the vats are cleaned and the wine is returned to them for malolactic fermentation, with bâtonnage. The wine then matures on the fine lees for one year, racked only once, and is then given a further 3 months’ ageing in glass before release.

Average age of producing vineyards: The older section of the vineyard has 50-year-old vines, the younger, recently planted, is 5 years old.

Fermentation and maturation: Controlled fermentation at about 30oC, followed by maceration in steel over 11 to 15 days, with both open and automatic pumpovers at least 3 times daily. The wine completes malolactic fermentation in steel and maturation for at least 24 months in oak botti varying in size from 25 to 50 hectolitres. Alcohol: 14%
A strikingly brilliant ruby in appearance, very luminous. The nose, heady and generous, releases complex varietal aromas, with pungent notes of autumn leaves and spice well in evidence, complemented by nuances of tanned leather, liquored dried plum, black liquorice, and cocoa powder. The palate develops impressive fruit, bolstered by a solid charge of tannins that will become supple with bottle ageing. A lively acidity drives a lengthy finish well laced with savoury, succulent fruit.

Serving suggestions: Pot roasts with Barolo, red meat and game, stuffed guinea fowl, first courses featuring meat or mushrooms.

This Grappa di Moscato is produced with an accurate selection of moscato ‘s marcs coming from the best areas of production, and it is made through the discontinuous system by steam-draught copper pots. This red wine Garda Classico Rosso D.O.C., was created following the same company philosophy as that adopted by the producer Fabio Contato in all his wines. So, this wine represents the highest expression of quality ever abtained, as for the Lugana D.O.C. The product derives from the careful grading of bunches at the vineyard. The grapes are then taken quickly to the cellar and put into tanks. In contact with their own skins the grapes are allowed to ferment for fifteen days and the wine is then poured into new French oak barriques where it remains for 24 months. After a further six months of maturing in bottles the wine is then ready for consumption. This is a well-structured wine of great expression. It has a long-lasting taste and is ideal for consumers who require a wine that is reserved for connoisseurs, where the care taken by the wine-producer is given the appreciation it deserves. A wine with very limited production, it is the result of many years of experience that seeks to highlight the potential of Lugana. Ageing serves to intensify the maturity of a wine with a great structure, obtained from the Estate’s oldest vineyards, with low production but great body. Grapevine: Trebbiano di Lugana. Garda Classico Chiaretto DOC

Chiaretto from Lake Garda stands out among Italian rosé wines for its fragrance and delicate bouquet. It is described in the literature as the "one night wine", since after pressing, the juice of the grapes of the four typical Lake Garda types linked to the Garda Classico D.O.C. denomination (Groppello, Marzemino, San Giovese and Barbera) is left to ferment with the skins for just a single night. A true Garda wine, Chiaretto is distinguished by its colour and delicate structure. It is appreciated by women but has a body which allows it to be laid down for several years. Production is about 15,000 75 cl bottles annually. The wine can be enjoyed with cold meats, risottoes salads and light fish dishes. Alcohol content 12.5% Vol., total acidity 6.5, extract 20, pH 3.2.

Garda Classico Rosso DOC "Negresco"

The name Negresco has been taken from the famous Provencal "Hotel Negresco" in Nice. This red wine comes from vineyards of fine grapes linked to the Garda Classico D.O.C. denomination, such as Groppello, Marzemino, Sangiovese and Barbera. Negresco is the modern wine per excellence, full bodied and rich in fruitness, spices and very long-lasting effects. It possesses a balance and level of satisfaction that is rare in wines of its category. This is obtained with a long period of fermentation with skins immersed all along. The aging takes place in barriques of 250 and 500 litres for a minumum of 12 months. Then the Negresco emerges ready for the most discriminating connessesseurs. The annual production is 35.000 bottles. It is best served with red meats, poultry and other typical Italian dishes, especially braised meats. The choice of this imaginary name is tied to the ancient Roman word GIOMELLE, which means the union of two things. In fact GIOME' wine is the union of two important grape varieties of the hinterland area of lake garda, and precisely of Merlot and Cabernet grapes. The two grapes age for 6 months in Barriques that are controlled by a sensible and continuous sampling, taken from the barrels, which are brought to correct ageing. This is a very good wine for the price. It's made from 33.3% Cabernet, 33.3% Merlot, and 33.4% Montepulciano (hence the name, which means "33"). The wine has nice aromas of plum, coffee, and cellar, a smoky flavor with a nice balance of tannins, acid, and fruit, and has a drier finish than most Italian Cabernet blends. It tastes older than you might expect from the 2007 vintage date, which makes one suspect the winery follows the old-school practice of aging in large, old oak barrels. It's very food-friendly: Try it with spaghetti carbonara, grilled game meat or steak, but it would go with just about anything.

VAJOI Valpolicella Classico Superiore Ripasso D.O.C.

This Valpolicella Ripasso is produced from Rondinella, Corvina, Croatina, Cabrusina and Dindarella grapes from vineyards that are particularly suitable for their hillside location. In the months of February, of the following year, the wine goes through a second fermentation process, thanks to the "Ripasso" technique, which consists in mixing the wine with the "vinacce", skins and seeds, left from the Recioto and Amarone fermentation. This wine is aged at least one year in oak barrels, where malolactic fermentation takes place. An intense ruby red colour. Wide perfume, persistent, fruity, lightly spicy. To the taste is soft, elegant tannins and a well balanced alcohol and wine structure.
Ideal with roasted red meat.
