The fermentation process is slowed by the cold winter temperature and lasts almost 40 days. IN THE VINEYARD

The Pinotage grape is unique to South Africa and is derived from the noble Pinot Noir and Cinsaut (formerly called Hermitage) varieties. The Momberg's are one of the foremost producers of Pinotage wines.
At Middelvlei, 24ha are devoted to Pinotage, planted at 3,704 vines per ha. The vines, grafted onto Richter 99 rootstock, were planted in 1962, 1975 and 1996. The vineyards face west and are situated at an altitude of 160m above sea level. The vines, grown as bush vines, are severely pruned to inhibit their prolific growth.

THE HARVEST

Harvesting took place from 1 February to 16 February during the day, at an average sugar level of 24° Balling. The grapes were hand picked and placed in small baskets to prevent bruising.

The white wine "Ca' Maiöl" Lugana DOC is produced from Lugana Trebbiano grapes and takes its name from Cascina Maiolo, the vineyard founded in 1710. The soil is made up of layers of calcareous clay created during the post-glacial era of Lake Garda. It gives the wine its characteristic straw colour with green highlights, its delicate bouquet of almonds and its very slightly salty, sappy flavour. This is a very good wine for the price. It's made from 33.3% Cabernet, 33.3% Merlot, and 33.4% Montepulciano (hence the name, which means "33"). The wine has nice aromas of plum, coffee, and cellar, a smoky flavor with a nice balance of tannins, acid, and fruit, and has a drier finish than most Italian Cabernet blends. It tastes older than you might expect from the 2007 vintage date, which makes one suspect the winery follows the old-school practice of aging in large, old oak barrels. It's very food-friendly: Try it with spaghetti carbonara, grilled game meat or steak, but it would go with just about anything.
